Dulce tres leches
PER 8 PERSONE, PREPARAZIONE 15 MINUTI
(+ 3 ore di riposo del dolce in frigorifero)Voglio proporvi la ricetta di un dolce tipico del Venezuela, anche se, con piccole varianti, e’ diffuso in tutta l’America Latina.
La ricetta originale prevede pure gli ingredienti per fare la base del dolce e con piu’ tempo a disposizione anche di montare la panna per decorarlo.Poiche’in questa rubrica cerchiamo di velocizzare le ricette senza perderne comunque la bonta,’ consiglio di comperare dal fornaio di fiducia un buon pan di spagna rettangolare e di tenere in frigo anche una panna spray per decorare.
INGREDIENTI
per uno stampo rettangolare simile a quello che si usa per un tiramisù per 8 persone:
1 pan di spagna rettangolare;
1 barattolo di latte condensato da circa 350 ml;
1 barattolo di latte evaporato da circa 350 ml non zuccherato;
350 ml di panna da montare;
1 bustina di vaniglina;
1 bicchierino di rhum;
zucchero eventualmente da aggiungere,a seconda che abbiate comperato la panna da montare già zuccherata o no;
1 bomboletta di panna spray per guarnire frutta-tipo fragole o lamponi-spruzzata di limone e zucchero.
PREPARAZIONE
Modellare il pan di spagna nello stampo da tiramisu(volendo potete togliere la pellicola piu’ scura che si forma durante la cottura) e con uno stuzzicadenti lungo punzecchiarlo fino in profondita’per far penetrare poi il composto dei latti.Mettere nel frullatore i tre tipi di latte con il rhum e la vaniglina e a questo punto aggiungere lo zucchero al gusto (se si e’ comperata la panna senza zucchero) e frullare ad alta velocità per un minuto.Versare gradualmente questo composto sul pan di spagna verificando che pian piano raggiunga il fondo.Non e’ necessario che il pan di spagna assorba tutto il composto; se rimane un po’ di liquido alla base va bene.Mettere il dolce in frigo per 3 ore, coperto da pellicola.Servire dopo aver decorato con panna montata e frutta.VINI DA ABBINARETrattandosi di un dolce consigliamo vini amabili come Malvasia, Moscato o Passito.

This week I’ d like to post the recipe of a traditional Venezuelan cake, even though with little changes this cake is very popular all around the Latin America.The classic recipe includes also the ingredients to make the sponge cake, but here I’ m trying to give fast and easy recipes so I suggest you buy at a good bakery a rectangular sponge cake to fit a tiramisu mold.
INGREDIENTS for an 8 people rectangular mold:
1 rectangular sponge cake;
1 can sweetened condensed milk 350 ml;
1 can unsweetened evaporated milk 350 ml;
1 can sweetened heavy cream 350 ml;
1 teaspoon vanilla extract;
1 liquor glass of rum;
1 spray can of whipping cream to decor;
strawberries and raspberries sprinkled with lemon and sugar to serve
sugar to add to taste
PREPARATION TIME 15 MINUTES
( + 3 hours in the refrigerator )
Shape the sponge cake in the mold, eventually cut out the lite brown skin of the side and top,
with a long tines fork pierce it throughly.
In a blender combine the evaporated milk, the condensed milk , the heavy cream, vanilla extract and Rum (now try the mixture and if needed add the sugar to your taste). Blend on high speed for 1 minute.
Slowly pour all the cream mixture over the sponge cake in two three times until well soaked.
Don’t worry if not all the milky mixture is absorbed by the sponge cake.
Cover the cake and refrigerate 3 hours.
At the moment to serve, spread the whipping cream on the top and arrange the fruit around to decor.
WINE TO PAIR
When pairing desserts and wine the same rules apply as when pairing food and wine one of the long-standing rules is to pair sweets with sweet , we suggest Malvasia , Moscato or Passito.
